How did the CT-1 Sous Vide Cook Tank come to be the first piece of DC Norris equipment manufactured in North America? It’s an interesting, somewhat fateful, story.

Long Before a Michigan Office – The Beginning of DC Norris

More than 50 years ago, in an industrial estate in the UK, DC Norris opened its doors. Today, DC Norris has equipped countless food manufacturing facilities around the globe with processing machinery that is among the most powerful, efficient, and safe equipment money can buy.

From early can openers designed for industrial applications to Jet Cook™, the fastest cooking and mixing system in the world, one thing is certain: DC Norris exists to evolve and meet the ever-changing needs of food producers.

In 2015, DC Norris Opened North American Operations

As the ready-to-eat meal market began to grow and evolve in North America; DC Norris recognized a current and future opportunity to serve. In 2015, DC Norris North America opened an office in Traverse City, Michigan. This expansion into North America brought the knowledge and expertise of the booming ready meal market to the US, at just the right time. Armed with decades of experience in the fastest growing ready meal market on earth and an equipment portfolio uniquely fit for the job, DC Norris North America President, Dick Smith, hit the ground running. Since opening in 2015, DC Norris North America has expanded operations opening a new office in Traverse City, Michigan in 2019 with room to grow.

Experience in Innovation Pays Off

Months before COVID-19 became a household name, bringing with it unprecedented labor challenges and supply chain shakeups, the planning and design of DC Norris’s automated commercial-scale sous vide cook tanks began on the heels of DC Norris being recognized as a top global manufacturer of sous vide equipment in a February 2020 Aritzon report. The report pegged the growth of the sous vide equipment market to many factors that are still relevant today:

  • Direct-to-Consumer Marketing and Advertising of Sous Vide Products

If 50 years in the industry teaches a business anything – it’s that change is constant. Rather than rest on their laurels following the news of their sous vide equipment market leadership, the team at DC Norris worked tirelessly to design a sous vide cook tank that the industry needed; full automation capabilities in a more compact, near counter-depth size. Its timing – uncanny. It was released to the market as food manufacturers of all sizes, around the globe, grappled with pressing labor shortages, unstable supply chains, and ever-increasing operational costs as the result of the global COVID-19 pandemic. The CT-1, offering relief for all of those new market challenges, while allowing commercial-scale food producers to improve product quality and safety, was launched in October 2020.

Today the CT-1 Sous Vide Cook Tank is Proudly Manufactured in Michigan

DC Norris is proudly manufacturing the CT-1 commercial sous vide cook tank in Michigan. A first for the global business. The move to stateside manufacturing for this new equipment streamlines production, delivery, and service for clients in the United States and Canada – at a time when they need it most. 

No Minimum Batch Size, No Limit on Possibility

The CT-1 sous vide cook tank allows commercial-scale food producers to cook foods in batches of up to 120lbs precisely, while unattended, thanks in part to a product temperature probe. Most commercial-scale sous vide cooking equipment only measures and controls water temperature – leaving the possibility for food-borne illness to occur. The CT-1 sous vide cook tank reduces the possibility of foodborne illness from unsafe cooking and cooling temperatures, but the benefits don’t stop there. From improved nutrient retention to reduced need for additives and tenderizers, sous vide improves food taste, texture, health, and quality while also having a remarkable reduction in operation costs.
